Marinated/ marinated Soybean ( Sadeko Bhatmas)
It is not appropriate to call it Salad, but I don’t know what else I have to call it, In the Nepali Language we call it Sadeko Bhatmas which means marinated Soybean. But the process of marination is also completely different. Please watch the video for a detailed preparation process. It is traditionally served with roasted or fried flattened rice ( also called beaten rice)
Then, mix in the roasted dry soybeans or green soybeans well with all the ingredients and spices. This dish can be served as a snack. you can follow the same process with green soybean too.
- Roasted /marinated Soybean Salad (सादेको भटमास)
Ingredients:
2 cups, dry or green soybeans (frozen or fresh)
½ cup red onion, finely chopped
1 green chili, finely chopped
1 ½ tsp. fresh garlic, chopped or crushed
¾ cup, green onion, and green garlic chopped
2 small tomatoes, chopped
¾ cup, mustard oil or olive oil
2 tsp. roasted cumin powder
1 tsp. dry Sichuan pepper
salt to taste
2 large limes or lime juice,
Preparation:
Take a fry pan and dry roast the soybean till it starts cracking or popup. then place in a large tray to crush it to remove it ‘s outer cover ( watch video) remove outer cover of the soybean, Now take a mixing bowl and add all the soybean, Now combine red and green onions, green garlic , chilies. Add all the remaining ingredients and stir lightly.
Heat oil in pan.
Add fenugreek seeds until they turn black. Then immediately add that sautéed fenugreek to the mixing bowl. or just add olive oil or any cooking oil and Sichuan pepper.
Add lemon juice and stir before serving.
Serve with your favorite snacks.
